I'd like to make a cake..or if necessary a pie/torte...for my friend's Mom,who's turning 70...she doesn't eat much sugar,and is pretty "organic"...and has arthritis...not too much sugar or acid,from what she's said...I'm wondering about making curd with agave syrup...to avoid the sugar..and can I make a cake with maple/agave syrup instead of sugar...she won't eat much,but I'd still like to try..

Perhaps a Maple Pecan Pie.
The maple is more "Organic" than Corn Syrup, plus you can add MORE Pecans to cut down on the sweetness on the pie.

thanks..I was thinking of either Maple syrup,or Agave....just not sure "What"...maybe stacked layers...a cookie-like crust...then fruit and I don't know...If I put in THIN cake layers...can I make mango curd,for example,with agave?

Another great idea...thanks...but I may not do anything...plans keep changing...I may have to go out to Vancouver(bro's house up for sale in North Van...331 Roslyn Blvd...he put it on Craig'slist) to clean up....and the family gathering is still being planned...thanks all the same!
