I have a recipe for vegan brownies that I've been told that it makes a nice chocolate cake layer (minus the chips). I've been told that vegan icings are not so hot, you have to go with a shortening based icing - but I would think (if memory serves) that the WBH house BC would work and it tastes nice.
I will post it later as I'm off to Pilates and it's downstairs - it's from a Canadian source too! ReBar is a restaurant in Victoria - specializes in vegan and vegetarian cuisine.

vegan fudge brownies

1 1/2 cups unbleached flour
1/2 cup cocoa
1 1/2 cups brown sugar
1 1/2 tsp baking soda
3/4 tsp baking powder
1 tsp salt
3/4 cup coffee
3/4 cup soy milk
1/3 cup vegetable oil
1/2 cup walnutes - roasted and chopped
1/2 cup carob chips

glaze
7oz dark Belgian chocolate
5 oz vegan margarine

Preheat oven to 325F. Prepare 9x9" square pan by greasing and lining with parchment.
Sift together flour, cocoa, brown sugar, BS & BP and salt. In separate bowl stir liquids. Combine wet and dry and stir to mix well. Stir in walnuts and pour into prepared pan. Top with carob chips and bake for 25 minutes or until toothpick comes out clean.
Make glaze by melting chocolate and margarine over a double boiler, pour warm glaze over cake. Place in fridge to set, divide into 12 squares and enjoy.

My friend said to make without walnuts and carob chips - it will make a nice chocolate cake.

Here is my eggless cake recipe you can add soy milk instead of regular milk.
I hope you will like it. It is very easy recipe.

Eggless Cake -

Ingredients –
1 tin condensed milk
2 3/4 cups all purpose flour
1 tsp. baking powder
1/2 tsp. baking soda
4 oz. melted butter
1 tsp. any fruit extract or vanilla extract
1/2 cup milk
1/2 cup soda water / Club soda

Directions -
Preheat oven at 350. Grease your 8" round cake pan, or your cup cake pan.

Sieve all dry ingredients.
In a large bowl pour condensed milk, butter, extract and beat well till smooth and then add 1/2 cup of milk and soda water.
Mix it well and add flour spoon by spoon into the mixture.
Beat it gently till smooth.
Pour into greased cake pan.
Bake it for 10 minutes and then turn your oven temperature at 150 and bake it till done.

You can keep it at refrigerator for one week.

Somewhere I have a great carob (chocolate) cake recipie that I was given from a vegan family for me to make them, the cake is great but the icing is a glaze. I'll look for it for you and post it. You definately need to price it first they are usually more pricey to make since they're made with things like maple syrup rather than usual white sugar (and hopefully I don't have to say this but thye mean real syrup not that aunt j crap that's just simple syrup with maple flavouring). I'll look for the recipie and post it for you.
